We sat down with owner Carl Tiedemann, Event Director Rachel Dobrzykowski and Head Chef Chad Coryn to discuss all things LEX 530.
Can you tell us about what motivated you to start your business?
CT: "When we opened LEX 530 in November of 2018 my wife Emilie and I wanted to create an elegant space where people could come to make great memories and share unforgettable experiences. There is no other place like LEX 530 in the market. When couples choose LEX 530 they get amazing food prepared by Chef Chad Coryn, fantastic wines that I personally have sourced and incredible service from Event Director Rachel Dobrzykowski…all in a beautiful atmosphere."
What is your business background?
CT: "I’ve been a business owner in Elkhart for over 30 years, but my passion today is wine. I have been making wine in Napa Valley, California, and bringing it back to Elkhart to sell since 2012. LEX 530 offers me a way to share my passion for wine and good food with couples who appreciate the finer things in life."
Tell us more about wine at LEX 530.
CT: "We specialize in offering unique boutique wines that our guests will not find any other place in Indiana. Guests of LEX 530 can enjoy my own line of boutique wines (Glenwood Cellars and Tiedemann brands) that are made in Napa as well as many other offerings from small, independent winemakers from around the world that I personally find and bring back to Indiana. How do you differentiate your services from other businesses that provide the same services? What makes you stand out?
RD: "Our food and beverage options are second to none. In our on-site commercial kitchen, Chef Chad makes everything with only the freshest, locally-sourced ingredients. Chad’s palate is incredible and his food combinations are highly praised by everyone who dines at LEX 530. From the braised beef short rib with stout demi-glace to the rosemary and garlic rubbed rack of lamb with tomato-chili jam, our guests get the best of the best when it comes to food. The combination of Carl’s wine and Chad’s incredible food provides a dining experience that is out of this world!"

RD: "I love my industry because I feel like it brings people together with food, wine, excellent service and it makes lasting memories for people."
What should potential clientele know about you?
CT: "We want couples to come to LEX 530 and make great memories here. We want everyone, from the bride and groom to all the guests, to leave here feeling like they had the most amazing experience ever. Happiness is important to us. Sharing happy moments in life is important. Our team will do the best we can to make sure your bridal shower, rehearsal dinner, wedding and reception are some of the happiest memories you will ever have."
Tell us about your venue's services. How can you make a couple's day beyond anything they could have imagined?
RD: "We want to get every detail right. That’s why we offer several detailed planning meetings prior to the event to help you with room layout, food and beverage planning, event timeline and more. Plus, I am always available to you…face-to-face or via phone, email or text."
What is your favorite thing about what you do? What creates fun in your job?
RD: "I really enjoy watching couples finally get to celebrate their love after months of planning for their huge day. Working with clients as closely as I do produces the most fun in my job."
What are the most common questions you get from your clients? Can you tell us some words of wisdom on those questions?
RD: "The most common questions usually concern pricing and timelines for their big day. There is no standard of how weddings should be done anymore. I usually try to guide couples into tailoring their day to their wants and needs. Ultimately, it’s about them and no one else. Don’t worry about pleasing everyone because you won’t. Make your day the day that you want it to be! Fill it with the things that you love."
Are you able to provide flexibility for guests with dietary restrictions?
CC: "Of course. I am always happy to find ways to create delicious foods for those who have certain dietary limitations. For example, I make a great vegetarian option that is charred polenta, baby arugula, wild mushroom Bolognese with aged parmesan that can also be prepared vegan."
What is something people don’t know about LEX 530?
CT: "The original building where the event center is located was once a factory for Pacemaker mobile homes in the 1940s. In the 1990s we developed the building into a business incubator to help small businesses get started."
What is something people really enjoy at LEX 530?
RD: "We get so many compliments on the lighting, the curtains and the framed doorway into the small dining room. Brides and their photographers love the framing the door provides for their photographs, and we use it often as a backdrop for wedding ceremonies. I can’t tell you how many people ask where we got our beautiful chandeliers. We are so honored to have had interior architect/designer Debra Weninger of Debra Weninger Design in Chicago work with Carl and Emilie to create the amazing look at LEX 530!"
Is there anything you'd like to brag about?
CT: "I write a weekly blog about all things wine at www.tiedemannonwines.com. If anyone is interested in learning more about wine it’s a great source of information from a local source. Plus, it’s free!"
What is next for you? What is in store for the future of your business?
CT: "We want to continue to be more involved in community events. We are currently hosting monthly wine dinners here at LEX 530 and those have been extremely popular. If you follow us on Facebook, you can get the information every month. We also plan to do some fun things like a Mother’s Day brunch and a Tea here. We want to continue to help people make great memories!"
